The Tamil word kari for “sauce” was probably the inspiration for the curry. Indian curries most likely have a certain preparation method in common. Sometimes spicy, sometimes mild, depending on the preferences of the chef or the region. This aromatic base is called masala and it can consist of many or just a few ingredients.
